To make good wine, you have to start with good fruit. The key is the meticulous work of Winifred and Lynn in the vineyard. Intelligent pruning (winter), shoot positioning (spring), leaf plucking (summer), and picking (autumn).

Our wines have concentrated flavour. This requires waiting until the grapes show some shrivel. We pick selectively, for example having as many as five picks of the pinot noir.

Grapes are processed promptly to preserve flavour. Red wines are fermented in stainless steel tanks. White wines are barrel fermented. Wine is matured in quality French oak. We cellar our red wines, typically for four years, before release. Our vineyard and winery meet New Zealand sustainable criteria.
